  • 1 boneless 3-1/2 pound chuck roast
  • 6 cloves garlic, cut into slivers
  • 2 onions, chopped
  • 1 cup barbecue sauce
  • 2 tablespoons tomato paste
  • 1/2 cup water
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup lemon juice
  • 1/2 cup ketchup
  • 3 tablespoons brown sugar
  • 3 tablespoons grainy mustard
  • 1 tablespoon horseradish
  • 1 tablespoon Worcestershire sauce

  • Prep Time: 15 minutes
  • Cook Time: 540 minutes

  • Total Time: 555 minutes
  • Yield: 8 servings

Cut holes in the roast and put garlic slivers into the holes. Place onions in a 5-quart slow cooker and place meat on top.
In medium saucepan, combine remaining ingredients and bring to a simmer. Pour over the roast. Cover and cook on low for 8-10 hours or until roast is very tender. Remove meat, cover to keep warm, and set aside.

Thicken the gravy by pouring it into a large saucepan. Boil hard until thickened, tasting and adding salt as needed.

Serve with roast.
