Manage expenses. Check the day manager's stock order against the list of supplies the bartenders ask for each evening. They should match. Ask the bar-backs (who keep the bar supplied all evening) if they need items they'e not finding or if storage space is taken up with things they don't need. Check the relationship between the supply, the demand (from the night's receipts) and the ordering of any product the club uses, such as drinks, snacks and paper goods. If they don't match up, find out why. Do this at least monthly.

Handle the final "ticket" count (cover charge or whatever customers pay to pass into the club) at the end of the evening while you're making up the deposit. Get familiar with the normal level of take on each evening of the week. If that varies oddly, watch the doormen. One could be pocketing money instead of putting every customer's money in the box. That can happen at the bar too. A waitress and a bartender can collude to keep some tables for themselves and run a parallel receipt system. Or it could be due to the inefficiency of a sloppy waitress or a bartender who's a secret drinker.

Get to the front door or to the bar immediately whenever your security or a staff member calls you regarding an angry or drunken patron. It will be your call as to whether they can come in, whether your staff was at fault and apologies are needed, or if you have to call the police.
